Charcoal briquettes are merely lump charcoal that's been ground up mixed with some binders and pressed into briquette uniform shape. That process does two things. First, we will get more uniform burn times, will be easier to calculate temperature and its temperature fluctuations shouldn't be as much as it would be with the lump charcoal fluctuations, because every piece is very similar. Because they're all uniform you get a much more controlled burn out of these. For people who like to go low and slow with their barbecue, an example would be you want to cook a pork for a long time, this might be what you're looking for.

The downside of that, however, is that some companies put a few too many binders in there, which can give leave a foul taste and can also give you some really nasty ignition smoke. So, if you buy briquettes, I really recommend buying a quality of brand.

Lump charcoal is actual wood that has been charred. It is still a piece of wood. Lump charcoal typically burns hotter than briquette charcoal. Also, because it's real wood you can get a little bit more of that hardwood flavor that it's made out of. If you're cooking in a ceramic cooker, or you want to cook your drum fast, your better option is lump charcoal. And I typically recommend using lump charcoal for someone who's looking for higher heat cook, like searing a steak or if you're into barbecue.
